Mini Apple Turnovers

Ingredients
  

  • 1 package frozen puff pastry ( I used 14 oz package )
  • 4 medium red apples
  • 1 tbsp unsalted butter
  • 1/4 cup brown sugar
  • 1/3 cup water
  • 1 tbsp lemon juice
  • 1 tsp cardamom
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch of salt
  • 1 egg ( for the egg wash)
  • 1 tbsp milk (for the egg wash)
  • 1/4 tsp instant coffee (for the egg wash)

Instructions
 

Apple filling

  • Peel, core and cut the apples in cubes.
  • Melt the butter in a medium size saucepan over medium-low heat, add the apples, water and cook 4 minutes until soften. Add the brown sugar, lemon juice, ground cardamom, cinnamon, nutmeg, and a pinch of salt, and stir to combine. Cook on low for 3 to 4 more minutes until the apple sauce starts to caramelize.
  • Transfer to a bowl and set aside to cool completely.

Egg wash

  • In a small bowl, combine the milk and instant coffee until the coffee is fully dissolved. Add the egg, and whisk until well combined and set aside.

Preparation

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • Roll out the puff pastry ( I used a 14 oz package which has one sheet and I cut the sheet in half, each half) on a lightly floured surface to have a rectangle (12"x 8") with around quarter inch thickness. Keep the sides a little more thicker than the middle and cut the rectangle into 6 squares (each square around 4"x 4"). Brush the sides of each square with the egg wash, add 1 generous tablespoon of the cooled filling to the middle of the square. Fold the square diagonally over the filling to form a triangle and seal it firmly by pressing with your fingers (or a fork). Repeat with the remaining squares.
  • Transfer the apple turnovers to the prepared baking sheet. Brush each triangle with the egg wash. Using a thin and sharp knife make some lines on top making sure to cut very lightly so the filling does not spill out and lightly pierce 2 small holes with the tip of the knife on each square to let the steam out.
  • Bake for 25 minutes or until puffed and golden.
  • Cool slightly.
  • Serve at room temperature or warm and enjoy!

Notes

You can keep the apple turnovers in the fridge in an air-tight container up to four days. 
They are best when served at room temperature or warm. 
Serve them plain or with a scoop of vanilla ice-cream.
