Mediterranean Bruschetta with Feta and Tomato Spread

All of these components are combined in one easy to make, bite-sized treat. Enjoy this flavorful spin on a classic bruschetta appetizer.

Ingredients
  

  • 8 inch baguette
  • 6 oz feta cheese (crumbled)
  • 3 cups chopped tomatoes (about 3-4 medium tomatoes)
  • 3 tbsp olive oil (+ more to brush the baguette slices and to drizzle on top )
  • 3 cloves garlic , minced
  • 2 tbsp freshly chopped mint (or dried mint)
  • 1 tsp thyme
  • 1 tbsp balsamic vinegar
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 3 tbsp chopped parsley
  • 2 tbsp pitted and sliced kalamata olives

Instructions
 

  • Preheat oven to 375 degrees.
  • To make the tomato spread, heat the olive oil in a medium pan over medium heat. Add the minced garlic and saute for one minute until fragrant (do not let the garlic brown as it will change the flavor). Add the chopped tomatoes, black pepper, salt, thyme, and balsamic vinegar and stir to combine. Cook for three to four minutes until the tomatoes have softened and reduced their juice. Remove from the pan and place in a bowl.
  • Add the chopped mint (or dried mint), chopped parsley to the tomato spread and mix well. Set aside.
  • Cut the baguette in 1/2 inch thick slices. Brush each slice with olive oil on both sides and place on a baking tray. Bake for 5 to 6 minutes until lightly toasted.
  • Remove from oven and spread each slice with one tablespoon of the prepared tomato spread. Top each slice with the crumbled cheese and sliced Kalamata olives and sprinkle with some chopped parsley or mint. Arrange on a serving plate or tray and drizzle extra olive oil on top just before serving. Enjoy!

Notes

You can replace the mint with basil (fresh or dried) or Italian herbs.
