Sweetened Pumpkin Seeds
These sweetened pumpkin seeds are full of warm fall flavors; cinnamon, nutmeg, all-spice, cloves and sweetened with maple syrup and sugar. Just the right amount of sweetness with the perfect lightly caramelized and crunchy texture.
Ingredients
- 2 cups raw pumpkin seeds (shelled)
- 1 tbsp butter
- 2 tbsp maple syrup (or honey)
- 3 tbsp sugar divided (1tbsp to sprinkle after roasting)
- 1 tbsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp all spice
- 1/4 tsp ground cloves
- pinch salt
Instructions
- Preheat oven to 275°F.
- Line a baking sheet with parchment paper. Set aside.
- Mix all spices in a small bowl and set aside.
- Place the pumpkin seeds in a bowl.
- In a small pan over medium-low heat, melt the butter and pour in the maple sugar (or honey) and stir together to combine.
- Pour the butter mixture over the pumpkin seeds and toss to coat all seeds.
- Add the spice mixture and stir to evenly coat the seeds.
- Spread the seeds in a single layer on the prepared baking sheet and roast for 15 to 20 minutes or until seeds are light brown and crunchy. Make sure to stir halfway for even roasting and watch closely as they can over brown quickly.
- Remove to serving bowl and sprinkle with one more tablespoon sugar.
- Enjoy warm or after they cool.
Notes
Adjust spices to taste.
You can keep in an air-tight container for up to a week.
