Melt in Your Mouth Chocolate Bites

These cashew chocolate bites are naturally sweetened by the juicy Medjool dates. A no-bake energy snack to grab any time of the day. Full of healthy fat, natural sugar, and fiber. A great treat to serve to family and friends and let's not forget a treat that will melt-in-your mouth!

Ingredients
  

  • 1 cup raw cashew nuts
  • 128 g 70% chocolate block
  • 2 cup water (for the double boiler)
  • 4 pitted large Medjool dates
  • 1 tsp cinnamon
  • 1/4 tsp kosher salt
  • 1 tsp vanilla extract
  • 1/2 tsp ground cardamom (optional)
  • 1 cup unsweetened coconut (for the topping)

Instructions
 

  • Line a tray with parchment paper and set aside.
  • Roast the cashew nuts in the oven or on a frying pan for 5 minutes or until they start changing color to light golden. ( Make sure not to over roast them)
  • In the meantime, fill a small saucepan with two cups of water. Let it simmer on low to medium heat. Then, place the chocolate in a heat- safe bowl on top of the saucepan and simmering water ( without touching the water ). Stir the chocolate occasionally until the chocolate is almost fully melted. Remove the bowl from the heat and continue stirring until the chocolate is fully melted.
  • Place the roasted cashews in the bowl of a food processor, add the salt and pulse three to four times or until the cashews get broken into very small pieces. Do not over process them. Add the melted chocolate, pitted dates, cinnamon, vanilla and ground cardamom and pulse few more times until the mixture is crumbly and sticks together. Do not over process.
  • Remove the chocolate mixture onto the parchment lined tray. Press it together and gently roll to shape into a 2 inches diameter cylinder. Spread the coconut flakes around the log and gently roll it on the coconut to cover the whole roll. Tightly wrap the log with the parchment paper and chill in the freezer for 1 hour to firm up (or in the fridge overnight).
  • Take the roll out from the freezer or fridge and remove the parchment paper. Using a sharp knife, slice the chocolate roll into ⅓ inch rounds.
  • Serve immediately or place them in an air-tight container in the fridge so you can enjoy them at any time.
