Best Summer Salad
The stars of this salad are the in-season Heirloom tomatoes and ripe strawberries. A light and healthy summer salad with a delightful combination eaten as a full meal or a side salad. A feast for the eyes and mouth!
Ingredients
- 2 Heirloom tomatoes ( or 4 to 5 red and ripe tomatoes of your choice)
- 1 cup cherry tomatoes
- 1 cup sliced strawberry
- 1/2 cup red onion, thinly sliced
- 5 cups spinach
- 3 cups arugula (or mixed greens)
- 1/4 cup fresh basil, chopped
- 1 cup feta cheese, cubed
- 1 cup Medjool dates, cubed
- 1/2 cup sliced almonds, toasted
Dressing
- 1/4 cup olive oil
- 3 tbsp lemon juice
- 1 tsp sumac
- 2 tsp dried mint
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
Dressing
- In a small bowl, combine all ingredients until smooth. Salt to taste since the feta cheese is salty as well. Set aside.
Prepare the salad
- Place the green mix on a plate, top with the sliced heirloom tomatoes and strawberries. Add the rest of the ingredients.
- Drizzle with the prepared salad dressing and serve.
Notes
I used 2 Heirloom tomatoes since they are large in size.
Choose red and ripe tomatoes for best flavor.
