Best Apple Cake

An easy and satisfying Fall recipe. It has all the flavors we love and crave- warm apple and a delicious spice blend of cinnamon, nutmeg, and ginger. This cake is super fluffy and moist and does not need any additional toppings or frosting.

Ingredients
  

  • 3 eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup oil
  • 2 tbsp yogurt
  • Pinch of salt
  • 2 cups peeled and sliced apples (for the top)
  • 1 cup peeled and cubed apple (for the dough)
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg

Ingredients for the cake top

  • 1 cup brown sugar
  • 1 tbsp butter
  • 1 tsp cinnamon
  • 1/2 cup confectioners' sugar (for dusting)

Instructions
 

  • Preheat oven to 275 degrees and butter a 10 inch Bundt pan and set it aside.
  • In a large bowl whisk the eggs, sugar and vanilla extract until smooth and light. Add the flour, baking powder, baking soda, pinch of salt, 2 tablespoons greek yogurt, oil, cinnamon, ginger and nutmeg. Mix until just combined. Fold in 1 cup of cubed apples.
  • Spoon mixture into the Bundt pan.
  • In a separate bowl, combine the 2 cups of sliced apples with the brown sugar and softened butter.
  • Arrange them on top of the cake and bake for 45 to 50 minutes ( Or until a toothpick inserted in the middle comes out clean) . Let it cool in the pan before transferring to your favorite serving plate.
  • Dust with confectioners' sugar at serving time.
