Preheat oven to 275 degrees and butter a 10 inch Bundt pan and set it aside.
In a large bowl whisk the eggs, sugar and vanilla extract until smooth and light. Add the flour, baking powder, baking soda, pinch of salt, 2 tablespoons greek yogurt, oil, cinnamon, ginger and nutmeg. Mix until just combined. Fold in 1 cup of cubed apples.
Spoon mixture into the Bundt pan.
In a separate bowl, combine the 2 cups of sliced apples with the brown sugar and softened butter.
Arrange them on top of the cake and bake for 45 to 50 minutes ( Or until a toothpick inserted in the middle comes out clean) . Let it cool in the pan before transferring to your favorite serving plate.
Dust with confectioners' sugar at serving time.
