Apple “Pie” Cake
So is it a pie? Is it a cake? It's actually a cross between the two – so you get the best of both worlds! It has the delicious pie blend of warm apple and cinnamon combined with a moist spongy cake. We tend to associate apple pie with a cozy fall season – but this recipe is a year-round treat. And if you happen to have some vanilla ice-cream on hand, this will quickly become your favorite dessert. Bon Appétit!
Ingredients
Apple Topping
- 1 large apple; peeled, cored, and cubed
- 1/3 cup sugar
- 1 tsp cinnamon powder
- 3 tbsp butter, softened
- 1 tbsp lemon juice
- 1 tbsp flour
Cake
- 2 cups flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup sugar
- 1/2 cup oil
- 3 eggs
- 1 1/2 tsp vanilla extract
- 2 large apples; peeled, cored, and cubed
Instructions
Apple Topping
- In a bowl, combine the 1 cubed apple, sugar, cinnamon powder, butter, lemon juice, and flour. Mix well and set aside.
Cake
- Preheat oven to 350°F. Grease bottom and sides of a 9-inch cake pan (or a 9 to 10-inch springform pan).
- In a medium bowl, sift together the flour, baking powder, baking soda and salt.
- In another bowl, whisk together the sugar and oil. Add the eggs in one at a time and whisk to incorporate. Add the vanilla extract and chopped apples.
- Gently and gradually fold the flour mixture into the oil mixture. Whisk to incorporate batter.
- Spoon the batter into the cake pan (or spring form pan), filling about 2/3 of it. Spread the apple topping mixture on top of the cake batter, evenly covering it.
- Bake in an oven anywhere from 35 minutes to 1 hour, or until a toothpick inserted in the center comes out clean. Cool completely before serving. Sprinkle with powdered sugar, if preferred.
