Ingredients
  

  • 1 cup pitted medjool dates
  • 1/2 cup walnuts
  • 1 tbsp orange juice
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • 1/2 cup unsweetened coconut flakes

Instructions
 

  • In the bowl of a food processor, add the pitted dates and pulse until smooth. Add the orange juice, walnuts, cinnamon and chia seeds. Process until the mixture becomes crumbly and sticks together.
  • Using a tablespoon, scoop out the mixture and form into small balls using your hands.
  • Place the coconut flakes in a flat plate. Roll each date ball in the coconut flakes and arrange them on a tray lined with parchment paper.
  • Cover and refrigerate for one hour to set if you want to serve immediately. Otherwise, store them in an air tight container for up to one week.
