Strawberry Parfait
It is the season of strawberry which calls out for this recipe! Strawberry parfait with no eggs and simple ingredients. Fresh strawberries, heavy whipping cream, a splash of lemon juice and the right amount of sweetness. Creamy and bursting with flavor it is a unique summer treat!

- 500 g fresh strawberry
- 1/2 cup powdered sugar
- 1 cup chilled heavy whipping cream
- 1/2 tsp vanilla extract
- 1 tbsp lemon juice
Topping
- 1/3 cup heavy whipping cream
- 2 tbsp powdered sugar
- 2 or 3 sliced strawberry for garnish
- fresh mint leaves
Strawberry Parfait
Set aside a bowl ( I used a 6" round bowl) or any container of your choice.
Rinse and stem the strawberries.
Place the strawberries in the bowl of a blender with the powdered sugar, vanilla extract and lemon juice and blend until smooth. Set aside while you prepare the cream.
Place the chilled heavy whipping cream in a cold bowl and using an electric mixer (or whisk), mix until stiff peaks form ( around three minutes).
Add the cream to the strawberry mixture and using a spatula gently fold the cream with the strawberry mixture until well combined.
Pour the mixture in the prepared bowl, cover and place in the freezer for four hours or until completely frozen.
At the time of serving, remove the cover and place the bottom of the bowl in a container with hot water for 10 to 15 seconds to soften the edges and flip the bowl upside down on the serving plate.
Garnish with the prepared heavy whipping cream, slices of fresh strawberries and mint leaves. Cut, serve and enjoy!

For best flavor, use red, juicy and ripe strawberries.
