Frozen Mint Lemonade
My favorite summer drink and a classic Middle Eastern recipe - frozen mint lemonade! An old-fashioned homemade lemonade recipe with the added twist of fresh mint leaves blended with ice, yum! The mint gives it a cool and refreshing bite that is perfect on a hot day.

- 6 lemons (medium size) - Made 1 cup lemon juice
- 5 cups water
- 1/2 cup simple syrup
- 2 tbsp granulated sugar
- 1 cup fresh mint leaves
Simple Syrup
Place 1 cup water and 1 cup sugar in a small saucepan over medium heat. Stir with a wooden spoon until the sugar has dissolved and simmer for about 6 minutes. The syrup will be slightly thick. Turn off the heat and set aside allowing the syrup to cool at room temperature or in the fridge until ready to use. I ended up with 1ΒΌ cups of syrup. You can store any leftover in the fridge for up to a month.
Lemonade
Wash and dry the lemons.
Roll each lemon on a hard surface by pressing with hands. This step will soften the lemons and makes it easier to work with.
Cut each lemon into quarters and place in a big bowl. Add 2 tablespoons sugar. Push down and squeeze the lemons using your hands until all the juice is extracted and the sugar is dissolved. Press and squeeze the lemons well.
Discard the lemon pieces.
Pour the juice extracted through a fine strainer into the pitcher of your blender. Add the the simple syrup, mint leaves, water and blend it well. Give it a taste ad adjust to your liking by adding more syrup or water.
Serve over crushed ice ( or ice cubes) and garnish with lemon slices and fresh mint leaves.
