Tart Cherry Syrup

- 2 cups tart cherry concentrate (100% tart cherries)
- 1 cup sugar
- 1 cup frozen dark cherries or fresh cherries
- 1 tsp lemon juice
- 1/2 tsp cinnamon
- 1/3 tsp ginger powder
- 1/4 tsp cayenne powder
In a small saucepan or non-stick frying pan, combine the tart cherry juice with the sugar and lemon juice. Bring to a boil over medium-heat.
Lower temperature to medium-low and simmer for 25 to 30 minutes until syrup starts thickening and achieve the right consistency. At this stage the syrup should coat the spoon or spatula.
Add the frozen cherries, cinnamon, ginger and cayenne pepper and simmer for 2 to 3 more minutes.
Remove and cool to room temperature.
Use immediately or store in a glass jar in the fridge for up to 2 weeks.
