Mediterranean (Tzatziki) Cucumber Salad
A light and refreshing "salad" – the combination of cucumbers, yogurt, and mint can be enjoyed alongside any meal. The "tzatziki" sauce is a staple of the Greek community, but it is also popular under different names across the Mediterranean and Middle East. This sauce (without the cucumbers) can also make a delicious dip for any meat or vegetables or can be used in a wrap or sandwich.My personal favorite way to eat this Cucumber Salad is as a fresh, cold side dish alongside a hot summer barbecue. 🙂 Bon Appétit!
Ingredients
- 3 cups chopped cucumber
- 1 1/2 cup plain Greek yogurt
- 1 tbsp extra virgin olive oil
- 2 tbsp chopped fresh mint (or dried mint)
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1/2 tsp salt
Instructions
- Place the cucumber slices in a bowl. Add the yogurt, olive oil, mint, lemon juice, garlic, and salt and stir to combine. Make sure all the cucumber slices are well coated. Taste and add any additional herbs and/or salt if necessary.
- Tastes best when served immediately or chill for later.
