Heirloom Tomato & Summer Veggies Bowl
This bright and colorful bowl is such a delicious and nutritious addition to your summer menu!! The best part is the assortment of seasonal veggies, with the STAR of the show, the heirloom tomato! These tomatoes are my favorite addition to all my dishes in the summer, and absolutely worth the splurge. The fried shishito peppers add a tangy & crispy element to this bowl that is perfection.Who knew eating healthy could taste so good??Bon Appétit!
Ingredients
- 2 heirloom tomatoes
- 4 shishito peppers
- 2 cups arugula
- 1 cup kale
- 2 zucchinis
- 1 red onion
- 3 cloves garlic
Dressing
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp balsamic vinegar
- 1 minced garlic clove
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/2 tsp pepper
- 1 tsp kosher salt
Instructions
- Start by cutting the assortment of heirloom tomatoes into wedges and sprinkling some sumac on each wedge.
- Use your hands to shred the kale into large pieces. Chop the zucchini into round slices and cut the 2 cloves of garlic into thin round slices. Chop the red onion into small, thin strips.
- In a medium frying pan, add one tablespoon of olive oil and fry the kale, zucchini, shishito peppers and garlic until crispy. Let it cool.
- In a small bowl, combine all of the "Dressing" ingredients. In a large bowl, toss the dressing with the arugula, onion, and the cooled, fried vegetables.
- Top your bowl with the sumac-covered heirloom tomatoes. Serve and enjoy.
