Healthy Petit Fours (French Butter Cookies)
Super easy and quick to prepare with a healthy twist on the original recipe. No eggs and lightly sweetened. Dipped halfway in chocolate and you end up with pretty, light, buttery and crumbly cookies. Extremely addictive!
Ingredients
- 8 tbsp softened butter ( 113g)
- 2 cups almond flour
- 2 tbsp flour
- 1 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract
Dipping Chocolate
- 100 g milk chocolate
- 50 g 70% cocoa chocolate bar
Instructions
Dipping Chocolate
- Break the chocolate bars into small pieces and place in a heat proof bowl.
- Place a small saucepan filled with 2 to 3 cups of water over medium heat. When the water starts to steam, lower the heat and place the bowl on top ( make sure the bowl does not touch the water). When the chocolate starts melting, stir and remove promptly.
- Stir the chocolate until completely melted and smooth and allow to cool a little before using.
Petit Fours
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper and set aside.
- Place the softened butter in a large bowl.
- Add almond flour, flour, powdered sugar, vanilla extract and almond extract.
- With your hands, mix the ingredients until just combined and form into a disc shape.
- Lightly flour a rectangular piece a parchment paper, place the dough on top and lightly flour the dough, place another piece of parchment paper on the dough and roll it out around 1/4 inch thick.
- Gently remove the top parchment paper and use a 2 inches biscuit cutter to cut circles.
- Place the circles on the prepared baking sheet and bake for 10 minutes. Remove from oven and let them cool on the sheet for 10 to 15 minutes.
- Once completely cool, dip each circle halfway in the melted chocolate and place on the tray to cool and harden ( you can place the tray in the fridge for 10 to 15 minutes until the chocolate sets).
