Easy No Bake LAZY Cake
No bake? No flour? No egg? Count me in!! This simple to make, no bake chocolate lazy cake is divine. I mean it's called "lazy", so it does not get much easier than this! I love this recipe and always make it whenever I have guest over. Gooey chocolate and crunchy, buttery biscuits combine to form a beautiful slice of cake. Served frozen, it is the perfect summer treat. Bon Appétit!
Ingredients
- 1/2 cup butter
- 2 cups powdered sugar
- 1 16-oz carton heavy whipping cream
- 4 tbsp cocoa powder
- 1 1/2 packages butter biscuits (like Le Petit Beurre or Leibniz or McVities Digestive Biscuits)
- Optional: 1/2 tsp coffee
- Optional: 1/2 cup chopped marshmallows
Instructions
- In a medium saucepan, melt the butter over medium heat. Add the sugar and combine well with the melted butter. Then add the cocoa powder, heavy cream, and coffee. Continuously stir until it becomes a smooth chocolate sauce. Set aside.
- In a large bowl, use your hands to roughly break the biscuits into large pieces (each biscuit should divide into about 3-4 smaller pieces).
- Add the chocolate sauce to the biscuits pieces and stir until all biscuit pieces are covered in chocolate. (Optional: add in the marshmallows and stir)
- Lay flat a large piece of aluminum foil (about 9"x13"). Spoon the biscuit mixture onto the center of the foil in the shape of a log/loaf (lengthwise).
- Tightly wrap the aluminum foil around the "log" shape and seal the ends. Place in freezer for at least 4 hours (or overnight).
- Unwrap the "log" and cut into slices. Serve frozen!
