Watermelon Caprese Salad
This salad is a dream in the summertime. And the star of the show is my favorite fruit – watermelon! Cold, refreshing, sweet, and tangy; it's a wonderful and versatile salad!
Ingredients
- 16 oz fresh mozzarella cheese
- 3 cups cubed watermelon, about 2"x2"
- 1/2 cup Kalamata olives
- handful of fresh basil leaves
- 2 tbsp balsamic glaze
- 1 tbsp olive oil
- 1/2 tsp salt ( I used flaky salt)
Instructions
- Cut the fresh mozzarella into 2"x2" cubes with 1/2" thickness.
- Layer the mozzarella cheese, watermelon and basil leaves on the serving platter. Add the Kalamata pieces on top.
- Drizzle with balsamic glaze, olive oil, salt and serve cold.
Notes
Balsamic glaze can be easily prepared at home. Simply boil 2 cups of balsamic vinegar then simmer on low heat for about 20 to 25 minutes until it starts to thicken and is reduced by almost a half. Let it cool completely before serving. Store any amount left in a glass container in the fridge.
