Golden Turmeric Cake (Sfouf)
These little golden semolina turmeric cake bites are full of flavor. Moist and soft with no eggs and no butter just simple ingredients that can be prepared in just one bowl.

Ingredients

all-purpose flour
1½

semolina
1½
cup
sugar

cup
oil ( canola oil or light olive oil)
1½
cup
milk
1
tbsp
turmeric powder
3
tsp
baking powder
1
tsp
rosewater ( or vanilla extract)
pinch of salt

tbsp
tahini to grease the pan ( or butter or cooking spray)
1/2
cup
pine nuts - blanched almonds or cashews to top
Instructions
Preheat the oven to 350° F.
Grease a 13.5"x 9.5" baking pan with tahini and set aside.
In a large bowl, sift and mix the dry ingredients together, flour-semolina-turmeric-baking powder and salt.
Add the sugar, oil, milk and rosewater and mix well until fully combined and smooth. ( Do not over mix )
Pour the batter in the prepared pan, smooth the top with a spatula and sprinkle with the pine nuts.
Bake in the preheated oven for 25- 30 minutes or until lightly golden color
Cool then slice into medium or small size portions.

Notes
Store in an airtight container at room temperature or in the fridge for up to a week.
